Rice Krispies Recipe
Another simple addition to my recipe collection: Rice Krispies.
We made this because we had lots of leftover marshmallows that we didn’t want to go to waste. It’s a classic of childhood, but also gluten free, which is all the rage right now.
The recipe is essentially the one from the Kellogg’s Rice Krispies website.
Ingredients:
- 50 mL or 1/4 cup margarine
or butter - 5 cups miniature marshmallows
- 2 mL or 1/2 tsp vanilla extract
- 6 cups Rice Krispies cereal

Melt the margarine in a large saucepan. LARGE. There will be over 6 of Rice Krispies added later, so make sure it has the volume.
Then, add the marshmallows and stir until melted and well blended. The result will be quite sticky.

Remove from heat.
Stir in vanilla.
Then add cereal and stir until fully coated. This part is messy!

Then, press into a lightly buttered container. We used a 12″ x 12″ glass pan that was about 2″ deep. This part was tricky and messy.

Then cool and cut into bars.

So, here’s a simple, easy classic! But, please be warned that cleaning up the saucepan/pot is probably the hardest part!
