Mexican Lasagna Recipe

One more recipe from my time in the hospital. Yesterday it was crepes. Today I’m going to talk about the Mexican Lasagna I learned to make during Occupational Therapy in the hospital. This recipe is the most complicated I’ve posted so far in the recipes category. But, it’s much simpler than traditional lasagna. What makes it a Mexican Lasagna? Well, it uses ingredients you might see in tacos or nachos like salsa, guacamole, and taco seasoning. Crepes Recipe

While I was in hospital, I was privileged to attend an Occupational Therapy class that was really a cooking class. It was really to exercise dexterity and standing, but I found it a nice way to do some “therapy” while learning something new. It was my job to make the crepes, mostly because I was one of the only people in that class that could stand up at the stove at the time.
