Mexican Lasagna Recipe

One more recipe from my time in the hospital. Yesterday it was crepes. Today I’m going to talk about the Mexican Lasagna I learned to make during Occupational Therapy in the hospital. This recipe is the most complicated I’ve posted so far in the recipes category. But, it’s much simpler than traditional lasagna. What makes it a Mexican Lasagna? Well, it uses ingredients you might see in tacos or nachos like salsa, guacamole, and taco seasoning.
