Modified Mexican Lasagna Recipe

A couple of weeks ago I posted a recipe for a Mexican Lasagna. I have since made it again with significant improvements. The recipe is now gluten-free by using fresh corn tortillas instead of wheat. And healthier using ground chicken instead of beef. And, finally, turmeric was added for additionally flavour and anti-inflammatory properties. Changes from the last recipe are highlighted in bold. Mexican Lasagna Recipe

One more recipe from my time in the hospital. Yesterday it was crepes. Today I’m going to talk about the Mexican Lasagna I learned to make during Occupational Therapy in the hospital. This recipe is the most complicated I’ve posted so far in the recipes category. But, it’s much simpler than traditional lasagna. What makes it a Mexican Lasagna?
